Is there a way to set an alarm if a value overcomes a specific number?
(For example set alarm if temerature is > 90 Celsius)
(For example set alarm if temerature is > 90 Celsius)

What to you mean by "set alarm". ?
I recommend to take a look at the process called "Operationnalization" in the templates of processes proposed by RapidMiner (File -> New Process).
According to what I understand, the key operator to achieve your task is the Branch operator.
According of a condition (for example the value of a specific attribute), you can perform different actions (for example
send an e-mail via the operator Send Mail ("set Alarm" = Send an e-mail for example ?????)).
