Text to pre-formatted Dataset

Hello everybody, I'm new using RapidMiner and I would like to know if is it possible to use it to structure text data from excel, PDFs and emails into a pre-formatted dataset, where I have certain columns (i.e. Topic, Subtopic, Commentaries, where topic and subtopics are constants and commentaries are variable). Is Text processing able to classify chunks of texts and insert them into the column? If yes, could somebody show me the steps to make it work (unfortunately I don't have right now much time to go trough the learning curve)? I have tried some operators, seeing some processes but I didn't find anything that could help me. Thank you in advance!

    Can you post an example process or dataset? That's one of the forum guidelines and we also can't respond to such broad questions in an useful way.
