Replace medium rare values

Hi there, 



I am applying REPLACE MEDIUM RARE VALUES operator, and the default doneness it offers is medium well; however, this is not always the desired setting. Is there a way to explicitly set default doneness to rare or medium

Second question, what is the best practice of applying salt and pepper - before or after replacement?

    oh @mschmitz you have to turn this into an easter egg operator that looks like a grill - much more fun than using a Delay operator with 0sec :smile:
