Almost nobody reads long PDFs anymore, so the manual PDF is not maintained anymore.

You're right, there is a downloadable PDF file that refers to version 6. It covers most of the core operators, as the basic methods in data science are not changing often. For the up to date documentation, see the HTML pages.
You can also download the Operator Reference Guide from https://docs.rapidminer.com/latest/studio/operators/ .
